intrested 和intresting都是形容词，intrested 表示感兴趣的，a person is intrested in sth; intresting 是说东西事物很有趣，让人感兴趣，an intersting book, an intresting man 就是说这个人很有趣，让其他人感兴趣。
你后边的问题我没太看懂，ed 和 ing 都有。 ed 表示过去时； ing 和be动词连用，(be +V ing )表示一般进行时。两者时态不一样。

一般说明人有趣用 interested ,如果是某事有意思 用 be interesting
某人做某事 sb is doing sth. 比如我在写作业 I'm doing my homework.
